Michelin-star chef Marc Fosh is in the kitchen showing us how to recreate a comforting Kaiserschmarrn with red fruits and a colourful ratatouille.

Kaiserschmarrn with red fruits

Literally a pancake fit for the kings. The name of the dish is 'Kaiser' – meaning King – and ‘Schmarrn’ meaning shred. The pancake is thick, light, and fluffy due to the beaten egg whites which give the pancakes a soufflé-like texture. Developed in the 19th century, Kaiserschmarrn has gone on to become one of the most famous desserts in Austrian cuisine.
